The Farm Mirabella is a commitment to issue and respect its Ethical Charter, a document that contains the principles of business ethics and rules of production quality, to allow consumers to better understand and appreciate the Franciacorta DOCG and the Mirabella style. The Denomination of Italian wine Origin defines the geographical area and production method in which the members must strictly follow, as well as the references of quality and typicality recognizable by consumers. In a time in which the production of classic method sparkling wines has grown, with this Charter, the company wants to explain the features of a Franciacorta DOCG, confirming a commitment that Mirabella took over in 2001 and that still continues.
Ethics is the respect for the rules that create a great Franciacorta. It is also the use of the brand Mirabella on our Franciacorta and the renunciation of the words ‘sparkling wine’. Pillar of this corporate ethics is also the production philosophy in full respect of typicality and nature.
Quality and environment
Respect for the environment and attention to the quality are reflected in the pursuit of excellence in many production factors.
Since 1997 Mirabella has undertaken a winemaking trail that aims to break down as much as possible the use of products and chemical additives for phytosanitary treatments and fertilizing.
The entire agricultural area (about 50 hectares) is managed with FIT 214 (already act 2078, already act F) since 1997 (Agriculture Lombardy Region).
Each treatment, with low environmental impact, is programmed only when climate conditions, phenological stage of the plant, the presence of pathogens, represent a real risk factor for the grapes and the screw (IPM). Only thanks to three decades of knowledge of land and vineyards business, it was possible to make this choice.
The building of Mirabella, built between 1945 and 1948, was thought to be adequately isolated with the thickness of the perimeter walls (60 to 80 cm). The wine-making cellar is made from reinforced cement tanks coated with resin.
Thanks to this insulation, you get a 25-30% energy savings for heating and cooling, compared to stainless steel containers. Since 2006, the use of nitrogen during the mashing allowed to keep the temperature of the must at 18-19° C, even during clarification (vinifications traditional musts are brought to 13-14 ° C for 18-24 hours, clarified and then heated to 18-19° C) with an important energy saving, if you consider the volume of Franciacorta DOCG and IGT Sebino that Mirabella works annually (about 4300 Hl equal to 573,000 bottles). This technique has also reduced for a 85% the amount of lees fining, eliminating the use of filters scum and diatomaceous earth (classified special waste). This allow us to improve the quality of Franciacorta and the working conditions. The aging cellar of Mirabella is completely underground and immersed in a water table surface that keeps naturally constant temperature throughout the year (15-17 ° C) and relative humidity (80-85%). From June 2012 Mirabella uses only electricity from renewable and clean sources (COFER certificate n ° 2012/06/1403281). Since 2001 Mirabella makes the collection of waste by about 85%; the percentage is growing.
The care and the knowledge of the vineyards allow Mirabella to obtain grapes always been in the best health possible. This, combined with the use of nitrogen in different stages of winemaking, makes sure that the chemical intervention on Franciacorta DOCG, in particular sulfites, is steadily declining since 10 years: the legal limit is 235 mg / liter of total sulfite; the average level of Franciacorta DOCG Mirabella is 40-50 mg / liter. It was also completely eliminated the use of other potential allergens, dairy and eggs. This philosophy has led the company, in collaboration with University of Viticulture and Enology in Milan, to create, from the 2010 harvest, an “Elite” Extra Brut Franciacorta DOCG, free of allergens including sulfites added (9 mg / liter of total sulfites, produced exclusively by the yeast during the fermentation, the declaration limit is set at 10 mg / liter). For years Mirabella selects suppliers and partners with requirements in line with their own eco-productive policies. In particular, we choose partners that:
- have their headquarters and production in Italy and employ materials of Italian origin and / or the European Union;
- se clean energy sources, preferably self-produced;
- ensure the recyclability of the purchased;
- use in the production cycle materials or components from recycling;
- are able to demonstrate the reduction of pollution over the years, resulting in the production process (thanks to the carbon balance).
